Made some retirement cakes for two young souls getting ready to live life!!
I had a blast making these cakes. Don wanted chocolate cake and chocolate frosting. Luana wanted Bavarian cream and strawberries. I wanted to test the techniques on how to air brush.

I first volunteer to make a retirement cake for Luana and Don. I was thinking maybe making one for them. But then Luana told me how many people that she was expecting. About 50 people she said. Then I thought well I will make two cakes. As I baked everything off I realized that Luana’s cake was going to be really high. She mentioned to me that it would be difficult to serve out even portions to a really tall tier cake. So I make two two layer cakes instead of one four layer cake. So I ended up making three cakes, which ended up being a really good suggestion. It took a little bit longer to decorate, but it was worth it, because I got to practice more of the air brushing techniques. Also the cakes were all gone for the time they were served.
I was asked from Danny and Alice to make a red egg cake for their sister’s red egg party. I tried to look online for some ideas, and really didn’t like any of them. So I created my own version. I had so much fun creating it.

I feel so sad for the tragic events that occurred in Tucson this past weekend. My heart goes out to the families affected by the event.
I thought I’d test out some Weight Watchers recipes, to see if they really do work. I want to try them out because it has the serving portion size and calorie information. Plus it’s a chance for me to eat healthier.

I made Zesty Chicken Noodle Casserole. It turned out okay, it needed a little more flavor. The onions were still pretty raw. Overall, it was eatable and pretty fillling. It was also pretty easy to make.

serving size: 1 cup has 414 Cal, 9 g Fat, 35 g Prot
Weight Watcher’s Challah Bread

This bread turned out okay. It is a far cry from real Challah bread, but I believe that it was worth it to make. If you are craving the real thing. I probably needed to knead the bread more, the recipe didn’t state to knead it enough, in my opinion. During the second rise time the braids aren’t noticable enough.
serving size: (1/10 of loaf) 102 Cal, 2g Fat, 4 g Prot
Weight Watcher’s Broccoli with Garlic

I actually liked this recipe, it was easy to make and had pretty good flavor.
serving size: 1 cup 51 Cal,3 g Fat, 3g Prot.

A cake I made for my friend Myra. Her husband was coming home from Iraq and she requested I make a gun cake for him. Luckily I had a gun around so that I could use as a model

Vanny’s Baby shower cake. I made a banana cake with cream cheese filling and Fondant.

I air brushed this cake in camouflage green, brown and black. This was also a Fred cake, in honor of him going back to Iraq and him celebrating Father’s day. This cake was hard to make since half of it was all ice cream (Cookies and Cream) it was pretty yummy.
Had a blast making Robin’s wedding cake today. I had so much fun decorating with Jenny. The wedding was absolutely beautiful.

I am constantly looking for quick and yummy meal ideas, since being a working mom is not easy. Some of my favorite things is ready made crust from Trader Joe’s. Above is the Garlic and Herb crust, which I topped with pepperoni, baby portabellas mushrooms abd red onion.

I made a healthier version also with whole wheat pizza dough and threw on some broccoli rabe.

Trader Joe’s also has a great black truffle flat-bread pizza that bakes up super quick. It was fabulous with the baby Persian cucumber salad and spinach stuffed Tilapia.

Since it’s getting hot. I am breaking out with the grill and having some fun cooking up veggies. I marinated sliced pork lions with some Char Xiu seasoning. I then brushed some Spanish style onions and asparagus with garlic olive oil right before throwing them on the grill.

This dish is packed full of great veggies. I have eggplant, broccoli, onions, carrots, baby bok choy, snow peas, straw mushrooms, tofu and chicken tenders jammed in this. My husband and I used to go to this restaurant in Tempe called Thai Basil, that we loved. I got the inspiration from our favorites there.

This morning we made Easter breakfast. We had strawberries, ham steak w/ orange marmalade glaze, scrambled eggs, cheddar and garlic biscuits, and a nectarine acai berry smoothie.

Tanessa went on an Easter egg hunt at Henry and Blossom’s house. I used the eggs Tanessa got from the hunt in a new deviled eggs recipe I wanted to try. I incorporated the left over ham from breakfast in the filling.

And then if we didn’t have enough eggs already, I made pork katsu donburi.

My first attempt was pretty good. But I wish I had made more sauce in the end. Byung and I totally enjoyed dinner having pork katsu donburi at home, without having to chase Tanessa around Samurai.
